Honey processed coffee is dried with the sugars from the coffee fruit on the bean. The more common washed preparation involves washing the sugars off after they have fermented for 24 hours on the bean following picking. To enhance the fruity flavor of the coffee, honey processed coffee is dried longer and slower, allowing the bean to soak up all the sugars and resulting in a more complex and sweeter cup.
